It is smoky, slightly spicy, and balanced with tomato, onion, herbs, and proper seasoning. This recipe works whether you are cooking for guests, prepping meals for the week, or making a simple dinner at home.

Ingredients for Jollof Rice with Chicken

- Onion: 1 medium, finely chopped
- Spring Onion: 2 strips, sliced
- Paprika: 1 large, chopped
- Tomato Paste: ½ cup
- Chicken Drumsticks: 6 pieces
- Sunflower Oil: ¾ cup
- Water: 750ml
- Salt: Adjust to taste
- Rice: 971g (washed and drained)

Rinse the chicken drumsticks under clean water. If you want a leaner dish, you can remove the skin, but leaving it on adds more flavor and crispness.
Season the drumsticks with a pinch of salt, rubbing it evenly over each piece. Set the chicken aside for a few minutes so the salt penetrates the meat before cooking.

🍳 Heat Up the Oil – Let the Sizzle Begin
Use a deep, heavy saucepan—preferably one that helps build the crispy bottom layer of rice known as “kem”.
Pour in the sunflower oil and set the pan over medium heat. Let the oil warm up until it begins to sizzle gently, but do not let it reach a smoking point.
Once the oil is hot and sizzling, it is ready for the chicken.

Place the seasoned chicken drumsticks carefully into the warm oil. Cook them until the outside turns a light golden-brown. You do not need to cook them through completely right now, as they will simmer with the sauce later.
