Hello, my lovely food lovers! ❤️
Today I’m sharing my Creamy Beef and Potato Salad, made with tender pieces of beef, soft potatoes, fresh vegetables, and a creamy homemade dressing.
For this recipe, I use cherry tomatoes, cucumber, avocado, red onion, spring onions, celery, and radishes. I combine everything with mayonnaise, Greek-style yoghurt, mustard, and a few seasonings.
I also like adding fresh mint and a squeeze of lemon juice at the end. It’s a salad I enjoy making when I want something filling with plenty of fresh vegetables.
❤️ Why You’ll Love This Recipe
My Creamy Beef and Potato Salad brings together tender pieces of beef, soft potatoes and a colourful mix of fresh vegetables, all coated in a creamy homemade dressing.
What I particularly like about this salad is the combination of textures. The potatoes are soft, the vegetables add a lovely crunch, and the beef makes it a filling meal. The fresh mint adds a refreshing touch, while a little lemon juice helps balance the creamy dressing.
It’s also a handy recipe to prepare ahead of time. You can serve it straight after making it or keep it chilled until you’re ready to eat.

How to Make Creamy Beef and Potato Salad
Boil the Potatoes
Start by peeling three medium-sized potatoes and cutting them into bite-sized pieces. Try to keep the pieces roughly the same size so they cook evenly.
Place the potatoes in a saucepan of water and bring to the boil. Cook for approximately 10–15 minutes, or until they are tender when pierced with a fork.
Once cooked, drain the water and set the potatoes aside to cool. Be careful not to overcook them, as you want the pieces to hold their shape when you mix them with the other ingredients.

Cook the Beef
Heat one tablespoon of cooking oil in a frying pan over medium-high heat. Add the two beef steaks, approximately 350–450g altogether, and cook until browned on both sides and cooked to your liking.
Remove the beef from the pan and allow it to rest for a few minutes before cutting it into bite-sized pieces.
Set the beef aside to cool while you prepare the vegetables. Cutting it into smaller pieces makes it easier to combine with the potatoes and dressing later.

Prepare the Fresh Vegetables
While the beef and potatoes are cooling, prepare your vegetables.
Wash the cherry tomatoes, cucumber, celery, spring onions, and radishes. Cut the cucumber into small chunks, slice the red onion and radishes, and chop the celery and spring onions.
Cut the avocado into bite-sized pieces and halve the cherry tomatoes.
Once everything is prepared, you should have a colourful mixture of fresh vegetables ready to add to your salad bowl.

Combine the Vegetables and Potatoes
Transfer all the prepared vegetables into a large mixing bowl. Make sure the bowl is big enough to hold the potatoes, beef, and dressing, with enough space for mixing.
Next, add the cooled potatoes, spreading them over the vegetables.
At this stage, I like to keep the mixing light because the potatoes are already cooked and can break apart if handled too much. The ingredients will be mixed properly once the dressing has been added.

Add the Creamy Dressing
Now it’s time to add the dressing.
Spoon one tablespoon of mustard, two tablespoons of mayonnaise and four tablespoons of Greek-style yoghurt directly into the bowl with the potatoes and vegetables.
Using a large spoon, carefully fold the ingredients together until the dressing starts coating the potatoes and vegetables.
The mayonnaise and yoghurt give the salad its creamy texture, while the mustard adds a little extra flavour. Make sure the dressing is distributed throughout the bowl rather than sitting in one place.

Season the Salad
Once the dressing has been mixed in, it’s time to add the seasoning.
Sprinkle over one teaspoon of paprika, one to one and a half teaspoons of Korean chilli flakes, up to one teaspoon of ground black pepper, and salt to taste.
Mix everything carefully so the seasonings are distributed through the dressing and vegetables.
I like using Korean chilli flakes because they add a little warmth to the salad. You can reduce the amount or leave them out if you prefer a milder taste.
Taste the dressing and adjust the seasoning if needed before adding the beef.

Add the Cooked Beef
Now add the cooked, cooled beef pieces to the salad bowl.
Using a large spoon, fold the beef into the potatoes and vegetables, making sure the pieces are coated with the creamy dressing.
Take your time when mixing so the potatoes and avocado don’t become mashed.
At this stage, all the main ingredients are together, and you can see the beef mixed throughout the salad alongside the vegetables and potatoes.

Finish with Fresh Mint
For the finishing touch, take approximately one tablespoon of fresh mint leaves and chop them into smaller pieces.
Sprinkle the mint over the salad and carefully fold it through the mixture.
I particularly like adding mint to this recipe because it brings a fresh flavour that works nicely with the creamy dressing, beef, and vegetables.
You can also save a few leaves to sprinkle over the top when serving.

Add Lemon Juice and Serve
Once everything has been mixed together, add a small squeeze of fresh lemon juice if you like.
The lemon juice is optional, but I enjoy the slight sharpness it adds to the creamy dressing.
Give the salad one final gentle mix, then transfer it onto a serving plate.
Finish with a little extra fresh mint on top, and your Creamy Beef and Potato Salad is ready to enjoy.

Creamy Beef and Potato Salad – Ready to Serve
And there we have it, my lovely food lovers! My homemade Creamy Beef and Potato Salad is ready.
I love how the tender beef and soft potatoes combine with the crunchy vegetables and creamy dressing. The fresh mint adds a lovely finishing touch, while the lemon juice gives it a little freshness.
You can enjoy this salad straight after preparing it, or keep it chilled in the fridge until you’re ready to serve.

🌟 Tips for Success
- Don’t Overcook the Potatoes: Boil the potatoes until tender but still firm enough to hold their shape. If they’re too soft, they can break apart when you mix the salad.
- Let the Beef and Potatoes Cool: Allow both to cool before adding them to the vegetables and creamy dressing. This helps prevent the dressing from warming up and keeps the vegetables fresh.
- Cut the Vegetables into Small Pieces: Try to keep the cucumber, celery, radishes and other vegetables roughly the same size. This makes the salad easier to mix and serve.
- Mix Carefully: Use a large spoon to fold the ingredients together rather than stirring too vigorously. This helps the potatoes and avocado keep their shape.
- Adjust the Chilli to Your Taste: Korean chilli flakes add a little warmth to the dressing. Start with less if you prefer a milder salad, then adjust to your liking.
- Add the Mint Towards the End: Fresh mint gives the salad a refreshing flavour. Add it after mixing in the beef so it doesn’t get lost among the other ingredients.
- Finish with a Little Lemon: A small squeeze of fresh lemon juice is optional, but it adds a slight sharpness that works well with the creamy dressing.
- Store Leftovers Properly: Cover and refrigerate the salad promptly. Keep it chilled and enjoy leftovers within 48 hours.
❓ Frequently Asked Questions
Here are some questions you might have when making my Creamy Beef and Potato Salad at home. Click on any question to see my answer!
Can I prepare this salad ahead of time?
Yes! You can prepare the beef, potatoes and chopped vegetables in advance. Keep them refrigerated, then add the creamy dressing, fresh mint and lemon juice closer to serving time for the best texture.
Can I use leftover cooked beef?
Absolutely! Leftover cooked beef works well in this recipe, provided it was stored safely in the fridge. Cut it into small pieces before folding it into the salad.
What can I use instead of Greek-style yoghurt?
You can use plain natural yoghurt instead. The dressing may be slightly thinner, but it will still taste lovely. If you prefer a richer dressing, you can adjust the mayonnaise to your taste.
Is this salad spicy?
It has a little warmth from the Korean chilli flakes, but you can easily adjust the amount. For a milder version, start with half a teaspoon or leave them out.
Can I leave out the avocado?
Yes, you can. I enjoy adding avocado because of its soft, creamy texture, but the salad will still be delicious without it.
How long can I keep leftovers in the fridge?
Transfer leftovers to an airtight container and refrigerate promptly at 5°C or below. I recommend enjoying this salad within 48 hours. Don’t leave it sitting at room temperature for long periods.
Can I freeze Creamy Beef and Potato Salad?
I wouldn’t recommend freezing the finished salad. The cucumber and other vegetables can become watery, while the creamy dressing may separate after defrosting. This recipe is best enjoyed fresh or chilled.
Can I serve this salad as a main meal?
Of course! With beef, potatoes, fresh vegetables and creamy dressing, this is a filling salad that I enjoy serving as a meal on its own. You can also serve smaller portions as a side dish.
